I always love a good stir fry🍴

Two ingredients that never fail to make an appearance in mine: cashews and ginger. For me, they make this dish 💯 times better. I’m all about the extra crunch and bursts of flavor!

This chicken cashew stir fry is a simple combination of mixed veggies + coconut aminos + chicken + lots of minced ginger + @traderjoes dry roasted & salted cashews - I added them in the very beginning to get them a little toasted 🤤

If you ever have random produce sitting in the back of the fridge, this is a great way to put those veggies to use. It’s an easy, one-pan meal that’s hard not to love!

Roasted 🥔 Veggie StirFry ‼️‼️ ‼️You can decide NO MEAT or WITH MEAT 😊  Ingredients:
- Roasted Oregano Potatoes - Sliced Asparagus - Sliced Red onions - Sliced red/orange/yellow peppers - Sliced Mushrooms - Sliced Carrots - Sliced Fresh Broccoli 
Note: Add as many vegetables as you want. 
Instructions:
1. Heat oven to 350° 
2. Slice potatoes small. Once sliced but into a large bowl. Mix in 1 table spoon of Olive Oil or desired amount, oregano seasoning and black pepper. Mix evenly together. Dump potatoes on to cookie sheet, spread out evenly and back for 45mins.
3. In skillet or stir fry pan heat up olive oil
4. Once oil heated, sauté finely chopped/sliced onions, peppers, carrots and asparagus until slightly soft.
5. Add to mix, broccoli, mushrooms and mix all ingredients together and season with black pepper. NO SALT JUST ALL NATURAL FLAVORS! 
6. Stir often and cook as long as you like.

→ meal prep these Lemon Tahini Tofu Fried Rice Bowls

this recipe serves 4-6, making it perfect for your #mealprepwednesday and only costs $6.75 for the entire recipe! recipe collab with @caraskitchen 🖤 → ingredients
• 1 cup uncooked brown rice
• 1 garlic clove, minced
• ⅓ yellow onion, chopped
• 1 bag stir fry blend vegetables, frozen
• ½ extra firm tofu brick from a 14-ounce package of tofu
• 1 lime, ½  zested, ½ juiced
• 4 oz lemon tahini dressing from @wholefoods365 → instructions
*for tofu:
1. remove tofu from package, wrap in a towel, and press with a heavy book to remove excess liquid for 10 minutes.
2. unwrap tofu, cut into ½ inch cubes, and toss in 2 fl oz of lemon tahini dressing and toss to coat. Marinate tofu for 10 minutes.
3. once tofu is done marinating, add ½ C oil to a skillet and heat to medium-high. Once skillet is hot, add tofu and sear until golden brown, flipping tofu cubes every few minutes. Once tofu is golden brown on all sides, remove from heat. *for rice:
1. cook 1 C rice according to package directions. Add in one minced garlic clove and a big pinch of salt to the water. 
2. chop ⅓ of the onion, minced two garlic cloves, and add to a heated skillet with 2 T of oil

3. Saute onions and garlic in oil until lightly brown, then add cooked brown rice to skillet and stir to coat in oil and onion/garlic mixture. Season brown rice with ½ tsp of salt.

4. add ¼ cup water to rice mixture and add frozen stir fry vegetables. Cover with a lid and cook for 3-4 minutes

5. once vegetables are tender, add 4 fluid ounces of 365 Lemon Tahini Dressing (½ the bottle) and stir to coat. 
Plate stir fry rice, dividing the total recipe into 4-6 serving bowls and distribute the tofu. Enjoy!

A simple and quick stir fry tonight. Chicken, packet of stir fry veg, mangetout, and mushrooms fried up before adding garlic powder, ginger powder (lazy but so quick and that was needed), hot chilli powder, chilli flakes and 5 spice powder. Oh and finally soy sauce. I mixed in dried egg noodles, so all free.
Had a day out walking with the kids today. We visited Cannock Chase with a very good friend, it was good for the soul. Managed to just eat a salad with ham and chicken, 1 tbsp light mayo (2) and 15g parmesan. And a banana!
Breakfast was 40g shreddies, berries and a Muller light (1).

I love squid, this spicy squid stir fry from DK Sushi on South 1st street is my go to for Korean/sushi in south Austin. They recently changed a few of their menu items and this squid was added. Squid, cabbage, carrots, kimchi and sesame seeds- deliciously simple. Most people would drive right past this place without noticing it, they have great lunch specials as well. ▪ ▪

Chicken and Broccoli Stir Fry 
Makes 2 servings
Per serving
1 Leaner protein
3 condiments
2 Greens 
Ingredients:
•  2 cups broccoli flowerets
•  18 ounces boneless skinless chicken breast, cut into 1-inch pieces
•  2 teaspoons almond flour
•  2 teaspoons finely chopped ginger
•  1 cup chicken broth
•  1 garlic clove, finely chopped
•  2 tablespoons soy sauce
Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Add chicken, garlic and ginger. Fry 2 to 3 minutes or until chicken is brown.
Add 3/4 cup of the broth, the soy sauce . Cover and cook over medium heat 5 minutes, stirring twice.
Add broccoli. Cover and cook about 5 minutes, stirring occasionally, until chicken is no longer pink in center and broccoli are crisp-tender.
