🧡 Sopa crema de zapallo 🧡🥄
Acá en el fin del mundo estuvo fresco pa chomba, así que les voy a compartir esta receta de sopa crema de zapallo que abriga pero también se disfruta bajo un buen aire acondicionado 😎
↪️Ingredientes:
750g de zapallo anco aprox. 
3 tazas de caldo
1/2 taza de leche
2 cdas de crema de leche
1 cucharadita de jengibre rallado
Cúrcuma, sal y pimienta 
Croutons y queso rallado a gusto
↪️Pasos:
Es muy simple! Lavamos bien el zapallo con ayuda de una esponja y lo cortamos en cubitos. Yo le dejo la cáscara porque es una gran fuente de fibra y en mi cocina nada se tira, pero si prefieren lo pueden pelar. Lo ponemos en una olla con el caldo, la leche, el jengibre recién rallado -puede ser en polvo también- y sal a gusto, y lo cocinamos destapado hasta que el zapallo se pueda pinchar con facilidad. Retiramos del fuego, ponemos los condimentos y procesamos con mixer o licuadora. Cuando ya esté tipo papilla le agregamos la crema y mixeamos un poquito más.
Servimos y terminamos con queso rallado y croutons -por supuesto de un pal que salió mal 😁😆 La consistencia es a gusto y pueden variar la cantidad de líquido, después de varias pruebas esta es la proporción que más gustó 😊

✅Mientras se asa una patata 🥔 en el microondas, se hacen los huevos 🥚 a la plancha

There are times when I feel guilty for asking loads of questions when I’m eating out. I sometimes feel like I’m being difficult...especially when there’s quite a few of us. But you owe it to yourself and also the restaurant to ask questions. Quite often you find that the places that claim to offer free-from, aren’t always aware of cross-contamination. So asking whether they make your food in a different fryer or if they use the same oven to cook your food isn’t being difficult. You are putting your health first and helping the restaurant. If we all asked more questions, it would make restaurants think harder about what they are offering. So next time you’re made to feel like you’re asking too many questions, think again because you are helping others.

Today’s kid’s lunch is brought to you by The Grapes of Wrath. That’s what I like to call Thursday’s and Friday’s when I peer into the fridge. Saturday is typically the day I go shopping so coming to the end of the week it’s often a “kitchen sink” sort of mixed bag. 🥑

We have an abundance of avocados because they were really cheap so I made a huge thing of guacamole for all of us to share. Raleigh’s meal is on top. He got some leftover cabbage from last night sautéed with leek and yellow squash then added in ground beef all over a bed of spinach and some broccoli sprouts. 💚

Evelyn got some pate on #sourdough , a couple slices of turkey, a hard boiled egg with @redmondrealsalt , guac with peppers and some spinach. 💚

Yes, Raleigh WILL eat that massive amount of food and it is massive! He may even come ask for something else. He’s a garbage disposal human being hybrid of some kind. Alien? 🤔👽 Perhaps. .#alwayshungry #stayhungry .

Somethings on my mind a lot these days while being a stay at home mom. This is my path and this is my passion, family is my main priority. However, the way society works today most families can’t survive off of one income, right?? This is so crazy. Some families can’t even survive on 2 or more incomes. The majority of jobs just don’t pay enough. I know I don’t want to be away from Jackson, I want and need to be here for him. I don’t think I could physically and emotionally leave him to go and work from someone else. Eventually it would break me, I’d feel like I was missing all the small things that make life so amazing. Not only that, if I were to go back to “traditional” work how the heck am I going to pay for daycare? I’d basically just be paying for daycare from my wages. It’s crazy isn’t it?!? But there are options and I love sharing these options with parents. Parents should have options to be at home with their children and/or have the lives they dream of. We shouldn’t have to leave our families to go to work if that’s not how we want to live our lives.

Cabbage Salad with Plantains and Protein balls! 🥗

Great for a healthy and comforting dinner!

Cabbage Salad
✔️ Purple cabbage
✔️ White cabbage
✔️ Sliced onions
✔️ Sliced tomatoes
✔️ Fresh chopped parsley 
Salad Dressing
✔️ Apple cider vinegar
✔️ Salt & pepper
✔️ Olive oil

Plantains
✔️Slice plantains
✔️ Put in a cast iron covered to cook a few minutes each side.

Protein balls
✔️ You can use your favorite protein: chicken, tofu or turkey
✔️ Chopped onions
✔️ Chopped bell pepper
✔️ Garlic
✔️ Parsley / Cilantro
✔️ Chopped jalapeño ✔️ Salt & Pepper
✔️ Cayenne Pepper

Ensalada de Repollo con Plátanos maduros y bolas de proteína! 🥗

Aderezo

I love pesto. I also love easy. I whipped this up from scratch in 15 minutes. 
For the pesto:
2ish cups Basil leaves + a handful of other greens (I never seem to have enough basil)
1/3 cup cashews (which I soaked overnight)
White miso paste
Nutritional yeast
Salt & pepper
Extra virgin olive oil
Splash of water
- all into the blender or food processor 
Noodles:
Ha they’re actually zoodles aka zucchini noodles. Steamed for a couple of minutes. I also added a handful of alfalfa sprouts. 
Add 2 poached eggs and seeds of your choice

I would add cherry tomatoes next time, I just don’t have any right now 🤷🏻‍♀️ Side note- this will make plenty of pesto sauce, for like 3-4 servings. 
Bonus: #vegetarian #glutenfree and #vegan without the eggs of course. For more protein you could add firm tofu or some garbanzo to the mix.

Also, add some salsa Macha. You’ll thank me later.

Kale Caesar Salad for 2 by @wearesovegan - ahhhhh I LOVE  as I keep repeating weekly haha, and this sauce looks so good.

Ingredients
1 large carrot
1 tsp soya sauce (or coconut aminos)
1 tsp maple syrup
2x 400 g tinned chickpeas
1 tbsp fresh lemon juice
1 garlic clove
1/2 tsp English mustard
1 tbsp
2 tsp capers
1/2 cup soya milk (or coconut / almond milk)
1 large cos or Romaine lettuce
2 large handfuls of
2 tsp paprika
salt
pepper
olive oil

Method
1. Preheat the oven to 200°C and line a large baking tray with parchment paper.
2. To soften the cashews, transfer them to a small bowl and cover with hot water. Set the  aside until they’re needed later in the recipe.
3. To make the carrot bacon, peel the carrot then thinly slice it using a mandolin or a knife.
4. Place the sliced carrot in a small mixing bowl. Add the maple syrup, 1 tsp olive oil, soya sauce, a pinch of salt and pepper, and toss to combine. Set aside and leave to marinate.
5. Drain, rinse and dry the chickpeas. Then transfer the chickpeas to the baking tray, drizzle with olive oil and season with a pinch of salt. Use your hands to combine. Bake in the preheated oven for 20 minutes.
6. Meanwhile, prepare the lettuce and kale by rinsing and drying the leaves. Then remove the stem from the kale and roughly chop the leaves into bite-size pieces.
7. To prepare the dressing, drain the cashews and place in a blender. Add the lemon juice, garlic, mustard, nutritional yeast, 2 tbsp olive oil, capers and soya milk to the blender. Blend until smooth and creamy.
8. Once the  have finished roasting, remove the baking tray from the oven and toss the chickpeas in the paprika. Push the chickpeas to the top half of the baking tray and lay the carrot slices on the bottom half. Place the baking tray back into the oven for a further 15 minutes.
9. Meanwhile, toss the leaves with the dressing until fully combined and plate up by dividing the leaves across four plates.
10. Remove the baking tray from the oven and sprinkle each portion with a quarter of the chickpeas and a few slices of carrot bacon.

Here are the ingredients you will need:
4 cups dry oats
2 cups pitted medjool dates
1.5 cups chickpeas
1 cup water
1/4 cup shredded coconut

Start by tossing 4 cups of dry oats into a large food processor or high powder blender and blend until the oats turn into flour. Set oat flour aside in large bowl.

Once cleaned out, toss pitted dates, water, and chickpeas all into the food processor or high power blender, and blend until a medium-thick mixture is created (mine was the consistency of pumpkin pie filling).

Pour mixture into your large bowl containing all of the oat flour you made earlier. Add in shredded coconut and mix everything together with your hands until you get a sticky dough-like consistency.

Roll in to balls and coat with your favorite cookie ingredients! I used carob powder, coconut, and blue coconut (blue spirulina mixed with coconut) for this batch, but you can also use cocoa nibs, nuts, crushed cereal, chia seeds, matcha powder, etc.

No hay mejor compañero para el frío🤧 que una sopa. Así que por eso hoy preparamos Lassa, un plato tailandés 🇹🇭 para entrar en calor bastante parecido al Ramen. Desliza para ver la receta 🤺

Vamos a ello 👩‍🍳:
Primero haremos la sopa. A un fuego medio.
1️⃣ Corta y sofrie 1 diente de ajo, 1 cebolla, y la parte blanca del pack choi en una olla.
2️⃣Añade la misma cantidad  de Calabaza y boniato y sofríelos un poco. 
3️⃣ Añade agua para que cubra todas las verduras. Acto seguido, diluye la pastilla de caldo de pollo y la pasta de curry rojo (⚠️ pica bastante así que no te pases😂) 4️⃣Pica 1 ajo, 1 cebolla y un manojo de cilantro y un poco de jengibre y añade lo picado a la olla. 
5️⃣ Tras un rato a ebullición, añade leche de coco y el jugo de 2 limas y si quieres un huevo poche rompe un huevo en la sopa.
6️⃣ Introduce en la olla fideos de ramen y las hojas del pak choi picadas antes de acabar. 
Ahora a parte en una sartén vamos a hacer el pollo
7️⃣ Adoba el pollo con una mezcla de especias marroquíes.
8️⃣ Pasa el pollo por la sartén vuelta y vuelta y nada más sacarlo ponle la miel. 
9️⃣ Puedes juntar ambos platos y se disfruta más.

Oatmeal is one of our go-to breakfasts during the week. It’s quick and easy to make, super versatile, healthy and delicious! 
I use old fashioned oats and cook it with almond milk, some water, a pinch of salt and a teaspoon of palm sugar. I like to add a good amount of liquid as we prefer our oatmeal to be a bit runny like a thick and creamy soup. Top with your favorite toppings such as banana, apples, berries, shredded coconut, hazelnuts, walnuts, hemp seeds, almond butter, cinnamon and maple syrup.. the possibilities are endless for a healthy and filling power-breakfast!

Btw, Cofi 🐶 gets oatmeal for breakfast every morning as well! I cook his with water only, add a bit of coconut oil and a sprinkle of turmeric and cinnamon. Those are good oils and antioxidants to keep his immune system strong and his skin, coat and digestion healthy. Then I mix in a bit of his @vdogfood vegan kibbles. Oatmeal is one of our go-to breakfasts during the week. It’s quick and easy to make, super versatile, healthy and delicious! I use old fashioned oats and cook it with almond milk, some water, a pinch of salt and a teaspoon of palm sugar. I like to add a good amount of liquid as we prefer our oatmeal to be a bit runny like a thick and creamy soup. Top with your favorite toppings such as banana, apples, berries, shredded coconut, hazelnuts, walnuts, hemp seeds, almond butter, cinnamon and maple syrup.. the possibilities are endless for a healthy and filling power-breakfast! Btw, Cofi 🐶 gets oatmeal for breakfast every morning as well! I cook his with water only, add a bit of coconut oil and a sprinkle of turmeric and cinnamon. Those are good oils and antioxidants to keep his immune system strong and his skin, coat and digestion healthy. Then I mix in a bit of his @vdogfood vegan kibbles.
