🖤Sometimes I want to eat a whole bowl of pasta with zero regrets. It’s all about living your best life and I couldn’t think of life with pasta. My husband made dinner tonight. Sunday night is my break from cooking and my hubby steps in and creates lovely vegan, glutenfree meals. Tonight it was stir fry with cauliflower, broccoli, red pepper, red chilli, snap peas, carrots, black beans, kale and tofu with basmati and fresh coriander. A wonderfully delicious and colourful meal. .

Food glorious food - Isn't food just beautiful! I am not able to snack on raw veg like I used to (my go to snack when my stomach worked properly - I was like a rabbit!! I grazed on every raw vegetable..😋) because of my gastroparesis - Food is a lot easier to digest when cooked, so I have been experimenting a lot using no oil.  If I eat food cooked in oil, I feel really poorly. I roasted some golden beets, purple carrots and sprouts at 200C for about 40mins with sprigs of fresh rosmary & thyme, a sprinkle of paprika, nutritional yeast and a pinch of salt. Usually I would parboil the carrots before roasting but purple carrots are softer, so I didn't see the need to this time. I paired the veg with my yummy sumac dip (you can find this on one of my recent posts) and a squeeze of fresh lemon - it went together beautifully 😋

I always stock up on fresh produce on a Sunday preferably at the farmers market, but there’s not a huge selection there this time of the year 😪 What’s usually on my list is squash, sweet potatoes (for soups/bowls), bread (sourdough preferably), greens, beans (didn’t buy any today cause we already have a ton!), veggie broth, fruit, and some snacks (not pictured my @lesserevilsnacks popcorn and @bouldercanyon chips 😉). I’m a firm believer in trying our best to reduce plastic (although I’m not perfect, I just try to do my bit), that’s where my @dans_le_sac bags come in handy 🤗 All from me for now friends on this sunny Sunday xo

A little Sunday magic💫
Crepes filled with coconut yogurt, berries and a big drizzle of maple syrup...coz we all love that big drizzle am I right!!😈

Recipe👇 makes 8-10
160g Gf flour 
2 C Almond milk
1 1/2 Tsp pure Vanilla extract
1 1/2 Tbls Rice malt syrup
.
Sieve flour into a bowl. In a separate bowl combine the Almond milk, vanilla extract and rice malt syrup.
Make a well in the flour, Add wet ingredients and combine with a hand whisk until smooth and all lumps have disappeared. 
Heat your pan, I used a 9” pancake pan..add a little oil.. add a ladle of the pancake mixture and tilt the pan with a circular motion until the filling fills the pan. (It took me a few goes to get this🤪)
Cook for Aprox 2 mins, flip with a spatula and cook for a further 2 mins.
Place on a wire rack and stack as you go!

Fill with coconut yogurt and berries, drizzle with maple syrup and enjoy!

Baked in the oven at 180C for 35 minutes, then topped with vegan cheese and another 10 minutes until the cheese melts.

Homogenisation happened in the 70’s & they processed the goodness out of milk.  Now we have soooo many peeps that can’t handle lactose because when men try to manipulate nature, crap happens to our body. ~

We shouldn’t be drinking large glasses of milk or giving it to our kids in large quantities. It’s inflammatory & takes its toll on our health. ~

We're eating artichokes for lunch! I cut off the top 1/3 of the leaves, steam the whole artichoke for 40 minutes, then dip the leaves in a sauce of: coconut water, maple syrup (or honey - non vegan), fresh garlic, salt, and pepper. I used to use olive oil instead of coconut water, but am working on staying low fat, high carb.

I went off of birth control in August of 2018 after following @drjolenebrighten and learning about the consequences of being on hormonal birth control for a long period of time. At that point, I had been on birth control for a total of 12 years 😳 I originally went on it because of major issues with acne and oily skin when I was going through puberty as a teenager. I never really thought about the fine print of birth control or the side effects that it could cause. Some of the problems from birth control that Dr Brighten sees in her practice are: onset of autoimmune disorders, food sensitivities, gas, bloating, leaky gut, candida, SIBO...the list goes on. The fact that all of my problems started to increase after I went on birth control got me thinking. Was this prescription drug that I had taken for 12 years causing my symptoms to persist? Additionally, I was getting my period twice a month and was struggling with a lot of other issues that were pointing towards hormonal imbalances.⠀

So I went off birth control in August -- cold turkey.⠀
-⠀
Then I had the onset of Post Birth Control Syndrome, which I have struggled with for the last 6 months. And let me tell you...it has been HARD. I stopped getting my period altogether, gained 10-15 lbs., started losing hair, woke up with the worlds most oily face, crazy acne, couldn't fall asleep at night, had night sweats, was constantly hungry, struggled with body acne...yeah, it has sucked 😫 but I kept going because I knew it was worth it. I knew that the only way to get to the other side was to push through and keep on working towards my end goal. To finally find equilibrium in my body and to resolve the chronic issues that I have dealt with for my entire life.⠀

So what had happened? My hormones were going CRAZY. They had relied on birth control for the past 12 years to regulate them and tell them what to do. Now they were on their own...⠀

Sunday baking: chocolate loaf cake with cream cheese icing! We added choc chips but the mixture wasn’t thick enough and they all sank... this did leave a very nice layer of chocolate on the loaf tin that was eaten with a spoon so not all bad 🤗

SIMPLE MEALS ARE THE BEST!
This nourish bowl screams simplicity to me, as well as nourishing and DELICIOUS! Also I don’t know about you but simple meals like this are quite aesthetically pleasing to my eye!!!!
This was the perfect meal when I wasn’t feeling that overly hungry! Just simple ingredients and flavours, without trying to complicate anything! It’s the perfect light lunch/dinner!

This bowl contains falafel, baked sweet potato fries and white potato fries, cucumber, lettuce, avo and @yumisdips hummus!
To make the falafels I used:
1 can chickpeas 
1 tbsp @mayversfood tahini 
Handful fresh parsley 
2 tbsp chickpea flour
Garlic powder
Chilli flakes
Coriander
1/2 lemon, juiced
Mash chickpeas, add all ingredients in a bowl and mix well. Roll into balls and bake for 20 mins!

Recipe⬇️
•
Ingredients:
2 tablespoons of oil
3 gloves garlic
2 small onions
4 tablespoons of tomato paste
2 boxes of chopped canned tomatoes
8 dl water
2 diced vegetable broth
Half a pot of basil

To do:
Cut garlic and onion
Fry onions and garlic in oil until it’s glossy
Add tomato paste and stir for a minute
Add canned tomatoes, water and vegetable broth
Boil for 10 minutes
Get the desired consistency with a stick mixer
Cut basil into small pieces and add it to the soup
Enjoy!
